If he is still in the UAE then he will be fined when he exits or renews his residence visa, I think 25 dhs per day.

If he has left the UAE then I don't think he will be allowed to re-enter, and it is likely that he will be denied boarding when he tries to check in at his departure airport.

If he is from one of the countries which can get a free visa on arrival, then he might be ok to do that, and get residence visa renewal arranged after he comes back. Otherwise he'll either need to get the visa renewed, or arrange another form of entry visa, but then you'll have to cancel his residence visa first. An expired residence visa is not the same as a cancelled visa, the immigration department will not issue a new visa of any sort unless his residence visa is cancelled.

You could phone the immigration department and ask if there's any grace period allowance or if they can do something to allow him to enter the country. Or get the residence visa renewal process started and ask them when he can enter the country again once the process has started.
